Ingredients
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup milk
Food coloring (various colors)
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, cream together butter and sugar until light and fluffy.
4. Beat in eggs one at a time, then stir in vanilla extract.
5. Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
6. Divide batter into bowls and tint with desired food colors.
7. Spoon colored batter into prepared muffin cups, filling about two-thirds full.
8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
10. Once cooled, frost with colorful buttercream and decorate with edible monster eyes to create your Monster Cupcakes.
Notes
For extra fun, use different shades of green, purple, and orange for your Monster Cupcakes. You can also add sprinkles or edible glitter!
