Spooky, delightful, and utterly delicious, these Halloween Brookies combine rich, fudgy brownie with soft, chewy chocolate chip cookie for the ultimate seasonal treat. Perfect for any Halloween party!

  • Total Time: 1 hour
  • Yield: 24 servings 1x

Ingredients

Scale

1 cup (2 sticks) unsalted butter, softened

1 ½ cups granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup chocolate chips (for brownie layer)

½ cup packed light brown sugar

¼ cup granulated sugar

1 large egg yolk

½ teaspoon vanilla extract

1 cup all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup chocolate chips (for cookie layer)

Optional: Halloween sprinkles, orange and black food coloring (for swirled effect)

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

2. For the Brownie Layer: In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then vanilla extract. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in 1 cup chocolate chips. Spread evenly into the prepared pan.

3. For the Cookie Layer: In a medium bowl, cream together softened butter, brown sugar, and granulated sugar until smooth. Beat in egg yolk and vanilla extract. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in ½ cup chocolate chips.

4. Assemble Brookies: Drop spoonfuls of cookie dough over the brownie layer. Using a knife or spoon, gently swirl the cookie dough into the brownie batter. (Optional: Divide cookie dough and color portions with food coloring before swirling for a Halloween effect).

5. Bake for 30-35 minutes, or until a toothpick inserted into the brownie layer comes out with moist crumbs. Do not overbake.

6. Let cool completely in the pan on a wire rack before cutting into squares. Decorate with Halloween sprinkles if desired.

Notes

These Halloween Brookies are perfect for making ahead! Store at room temperature in an airtight container for up to 3 days, or freeze for longer storage. For extra spooky fun, add green or purple food coloring to a portion of the cookie dough before swirling. Consider adding candy corn or other Halloween candies on top before baking for added festive flair.
